Lemon Zesty Bliss Balls
These tasty treats are refreshing, filling, nutritious, use simple ingredients, and best of all, they are easy to make. I have made a variety of similar recipes, but I think this recipe is my favourite. It combines ingredients that are high in magnesium, zinc, vitamin C, and essential fatty-acids which play important roles in digestion, sleep, and skin health.
3-4 large juicy lemons, ½ cup of whole grain rolled oats, ½ cup of sunflower seeds, 1 cup of almonds, 1 cup of shredded coconut, 1 teaspoon of cinnamon, 2 tablespoons of pure maple syrup, ½ cup of either soaked dates to soften, or medjool dates.
Place the oats, sunflower seeds, almonds, coconut, cinnamon, maple syrup, and dates into your blender. Blend, and then add the juice and grated zest from the lemons. Depending on the size of your lemons, and consequent texture of your mixture you may need to add a little warm water to help combine, or some more almonds or sunflower seeds if the mixture is not firm enough. Once combined, roll into balls, leave how they are, or coat in blitzed coconut or almonds. Keep in the fridge, eat, and enjoy!
